We chatted with ME Cabo General Manager Luis Dominguez on the expansion of the property; the restaurant concepts and more. Here’s what he had to say.
Can you talk about the expansion of the resort?
We reopened ME Cabo in November 2021, unveiling a beautiful $10 Million renovation and a brand new partnership with renowned Grupo Rosa Negra. Our completely reimagined look touched nearly every aspect of the resort; from guest rooms and public spaces to food and beverage outlets and an entirely new rooftop bar and lounge, in partnership with Rosa Negra. In keeping with the spirit of the ME by Meliá collection, ME Cabo offers an ideal location, contemporary design, personalized service and enriching experiences for the stylish modern traveler.
A how about in the restaurant department in particular?
The new venues at ME Cabo include a poolside beach club enveloped by cutting-edge music and performances, noteworthy Mediterranean cuisine with Mexican influences, and bars that offer signature Tequila and Mezcal cocktails.Taboo Beach Club sets the stage for an extraordinary social and dining experience, where food is an art form and truly transcendent experience. Here, Mediterranean food is lovingly transformed into a lifestyle, with fresh and original ingredients blended in new ways, for an authentic yet reinterpreted Mediterranean cuisine.
At Confessions Skybar & Tapas, guests can enjoy spectacular views of Los Cabos and the Sea of Cortez from this exotic bar and lounge hidden within a rooftop sky bar. It’s a unique space that resembles a work of art, with mystical and dramatic touches. An open-air restaurant, Mamazzita takes inspiration from the flavors and colors of Mexican culture, creating a festive and adventurous atmosphere.
This is the best traditional cuisine, reinvented with sophisticated culinary techniques and the finest ingredients. Located on the beach, just a few steps from the sea, Funky Geisha is a truly unique and mystical experience with artisanal mixology, and a great spot for celebrating and spending time with friends.
What’s the inspiration behind the new restaurant concepts?
By partnering with a gastronomy giant like Grupo Rosa Negra, our goal is to have ME Cabo continue to rewrite the rules in Cabo, offering new hotspots to create social epicenters for guests and locals.
What was the catalyst in investing so much in the resort’s dining program?
ME Cabo is all about art, music, energy and of course — cuisine. ME Cabo is the authentic social epicenter of Los Cabos and we wanted to ensure that our restaurants by Grupo Rosa Negra are the place to experience innovative and avant-garde dishes and high-energy entertainment.
